THE ULTIMATE VEGAN SKILLET PEANUT COCOA COOKIE 🍪
50g dairy-free butter
Your favourite egg replacement equivalent of 1 egg
5g cocoa powder
30g peanut butter
1/2 tsp baking powder
Push Chocolate Honeycomb Buttons
Pre-heat oven to 175C and grease a inch cast iron skillet.
In a medium mixing bowl, whisk together the flour, baking powder. Set the bowl aside.
With a hand whisker, mix together the butter with the sugar. Add the egg replacement and peanut butter.
Add the flour mixture and mix until the dough comes together then break up the honeycomb chocolate buttons (leaving some for the topping)
Scrap the dough into the skillet and place in oven for 30-35 minutes until it’s cooked through. At the last 10 mins of cooking time place the buttons on top.
Remove from the oven and allow it to cool a little before serving.
