(the leaning tower of) vegan honeycomb chocolate fridge cake

Ingredients

200g caster sugar

100g golden syrup

2tsp bicarbonate of soda

100g dairy free spread

150g dark chocolate

100g Push Chocolate Honeycomb Buttons
Directions
Melt the sugar and golden syrup into a large saucepan, stirring until the sugar is dossolved and the mixture turns a dark amber colour
Take off the heat and stir in the bicarbonate of soda quickly until it expands and goes frothy
Pour into a small lined baking tin and leave for 1 hour 30 to set
Cut up the Push Chocolate Honeycomb buttons into small chunks
Melt together the dairy-free spread and dark chocolate
Stir in the majority of the honeycomb leaving a few bits aside for decoration
Pour the mixture into a lined baking tin
Crush up the remaining honeycomb and sprinkle on top
Leave in the fridge for minimum 4 hours (ideally overnight - if you have the self control!) to set
Cut into slices (9 larger or 12 smaller slices works well) and store in the fridge
