80g gluten-free self-raising flour
½ tsp baking powder
1 tbsp flaxseed
1 tbsp maple syrup
100ml dairy free milk
1 tsp oil for frying
Toppings of choice
¼ cup coconut cream (optional, for Push Chocolate sauce)
Start by mixing flour, baking powder and flaxseed.
Whisk in some maple syrup and milk till it forms a smooth batter.
Tip: Don't overwork the batter! Stop whisking when it's smooth. Too much mixing will result in flat and dense pancakes.
Next, heat your pan and add about 1 tsp of oil.
Tip: NO HIGH HEAT! Set your pan to medium heat and let it heat up completely before making the pancakes.
Heat a heaping teaspoon of vegan butter in a frying pan over medium heat. Wait for the butter to bubble before spooning about 1/2 cup of the pancake batter onto it, spreading it out to form a nice circle.
Wait for the bubbles on top to flatten and the batter to separate from the pan. Usually, this takes about 2-3 minutes.
Cook for an additional 2 minutes on the other side, flipping with a spatula.
Repeat with the rest of the batter, stack your pancakes and serve Push original dairy free chocolate buttons and your favourite toppings!
