A Push Chocolate Layered Cheesecake
Ingredients

4 thin rice cakes

1/2 block silken tofu

Sweetener of your choice (this recipe used 3 pipettes of@myproteinuk flav drops)

1/2 tsp xanthan gum (or 1/2 tsp of chia seeds or flax seeds and 1 tsp of water)

2 lotus Biscoff biscuits or any ginger biscuits

10g walnuts

Pinch of cinnamon and nutmeg

Push Chocolate Honeycomb Buttons
Directions
Blend tofu with a sweetener, cinnamon and nutmeg in a blender into a smooth paste.
Add xanthan gum and blend again. The texture now should be quite dense.
Crushing the Biscoff biscuits and walnuts together into a crumble in a separate bowl.
Finely chop the Honeycomb Buttons and mix into the crumble.
Later the cheesecake by spreading the tofu mixture into a rice cake and covering with the crumble. Repeat with all 4 cakes.
Leave to stand for 10-15 minutes in the fridge, decorate and enjoy!
